ROASTED SWEET POTATOES
3 lb Sweet Potatoes – cut into 8 wedges
1/3 to ½ c Olive Oil
1.25 T Sugar
1 t salt
pinch black pepper
pinch cayenne pepper
Peel potatoes and cut each potato into 8 wedges lengthwise.
In a mixing bowl combine all ingredients with a wire whisk.
Add potato wedges and toss until evenly coated.
Spread evenly on sheet tray or roasting pan. Roast in oven at 375 ° for 10 minutes. Rotate and stir potatoes and roast 10-15 more minutes or just until lightly browned and fork tender
