SPINACH & GOAT CHEESE DIP
½ lb of goat cheese ½ cup sour cream ¼ cup finely chopped red onion ¾ lb fresh spinach - chopped ½ cup half and half ½ cup mayonnaise 1 teaspoon salt 1/8 teaspoon pepper Blanch spinach and drain well. (may need to squeeze excess liquid out) Cool. Combine all ingredients and mix well. Place in oven proof baking dish and bake at 350º to hot throughout. About 25 minutes. (time will depend on size of dish) (Cream can separate if baked too hot and too long)
