Persimmon Glaze

  • 1 tbsp canola oil
  • 1 ½  tbsp ginger puree
  • 2 cups unsweetened pineapple juice
  • 1 pound light brown sugar
  • ¼ cup apple cider vinegar
  • 1 cup Tamari
  • ¼ cup chopped green onions
  • 2 ½ cups chopped fresh persimmons, hulls removed

Heat oil in a pot over medium heat and sweat ginger. Add remaining ingredients and simmer until thickened, about 35 minutes. Puree with an immersion blender and strain through a fine strainer.
