PIMENTO CHEESE
1/3 cup Mayonnaise 1 tsp Lemon Juice ½ pound Aged Cheddar - grated ¼ pound Roasted Red Peppers – diced Add mayonnaise and lemon juice to a mixing bowl. Whisk with a wire whisk until well combined. Add grated cheddar cheese and diced roasted red peppers. Mix with a kitchen spoon until ingredients are evenly distributed. Yields about 1½ cups
